Salmon Rice Salad

For ages I have tried to enjoy a healthy eating lifestyle without living off salad leaves. Finally I cracked it. Rice salads, mixing healthy food with a rice base which does carb it up a bit but its well worth it. Serves 1

All you need is
1/2 cup of rice
Salmon fillet
Red onion
Red pepper
Sesame seeds
Sesame oil
Soy sauce

To make it
Boil the rice and cook for around 20 minutes.
Put the salmon under the grill on a tray covered with foil (if you don’t have foil don’t worry it just saves on the washing up).
Cut the carrot, red pepper, red onion and cucumber into slices.
Put the rice, salmon, vegetables and sesame seeds into a bowl and mix well.
Add the sesame oil to the mix.
When eating splash with soy sauce to enjoy.
