Lemon and Garlic Chicken

This dish was very much spur of the moment, I had a defrosted chicken breast and basics in my freezer, put it together and I got a pasta dish. I do understand I make a lot of pasta but it’s so easy and quick to make plus fills you up massively its ideal. Pasta is cheap to buy in bulk to students definitely worth investing in. Serves 1

All you need is

1 chicken breast

80g spaghetti

50g frozen vegetables

1 tbsp lemon juice

1 tbsp olive oil

1 tbsp garlic powder

1 tbsp italian herbs

To make it just

Cover the chicken in Italian herbs and chop into slices then fry in a small amount of oil.

In a pan boil and cook the pasta and vegetables together.

In a cup mix 2 tablespoons of olive oil, 1 tablespoon of lemon juice and 1 teaspoon of garlic.

Once the whole dish is ready place it together and cover in the sauce.

If your a lemon fan this is great, if you’re not however, you’re going to want to tone down the amount of juice you use as it does create a citrus kick. You can always up the garlic to compensate for the lemon if you’re a garlic fan.

This is a very light dish though, only just over 500 calories. You can add as many vegetables as you want to help up the health aspect but I wouldn’t suggest using less pasta as it is great to bulk up a meal with pasta as it’s so cheap and is such an easy way of filling yourself up.

Overall, the Italian herb chicken helps add a layer of interest to the dish and give it some flavour. Vegetables help bulk it up with the spaghetti helping to carb it up. The lemon-garlic dressing over the dish assists in flavouring the meal as well as giving it a citrus boost.
