I have recently been introduced to the avocado. I honestly wonder how I managed this far without it. It is great for adding to any meal and are increasingly popular in breakfast dishes, mixed with eggs this is full of protein and is sure to fill you up till lunch. Serves 1
All you need is
1 wholemeal muffin
1 poached egg
1 tbsp plain yogurt
¼ tsp garlic powder
¼ tsp lemon juice
Salt and pepper
To make it just
Cut the muffin half and toast. Boil the water to poach the egg. Cut the avocado in half and peel, place it in a bowl and mash down to a smooth consistency. Mix in the yogurt, lemon juice, garlic powder salt and pepper to the avocado.
When the muffin is toasted spread with the avocado mix and top with the cooked poached egg.

This is so tasty and so easy to make, it was ideal for the leftover avocado I had in the fridge and was so quick to do.
You can also try just spreading the avocado mixture onto two slices of toast and skip the egg for a quicker breakfast.
