Students can eat healthily on a budget, according to Faith Toogood. Here are top tips from Faith about tackling the issues of students struggling to eat healthily.

Faiths budget meal:

Courgette and onion bake

All you need is

1 onion

1 courgette

200g red lentils

700ml water

1 vegetable stock cube

To make it just

Fry the onion until soft, the slice the courgette and add to the onion to cook for a further few minutes.

Add the lentils and water to the pan before crumbling over the vegetable stock and mixing well.

Simmer for 15 minutes until lentils are soft and pulpy.

Season and serve with either new potatoes or soft crusty bread and some grated cheddar cheese on top.
