Banana and oat chunks

Cake is always a tricky one, it’s wanted often but with the amount of butter and sugar involved isn’t great on a diet, this banana and oat cake gives you the benefits of eating cake without the guilt. Serves 8

All you need is

50g oats

25g plain flour

1 tsp cinnamon

¼  tsp baking powder

¼ tsp salt

125ml milk

1 ½ tbsp honey

1 egg

1 tsp vanilla extract

1 banana

To make it just

Mix all the wet ingredients together, combine all the dry ingredients and then combine both and mix well.  Pour into a lined baking dish and bake for 35 minutes at 180°C/160°C Fan/Gas Mark 4.

I love cake, who doesn’t? Finding a healthy cake alternative is far from easy but this one worked a treat. The vanilla and honey gave it a great natural sweetness and the added cinnamon gave it  a spiced twist.

If I make this again – and I will – it’ll include some more fruit, either berries or apples. Both of which would change the consistency of the cake but that can be altered by adding on reducing other ingredients.
