I’ve never really had courgette before but they seem to be the new avocado this half of the year. Everyone seems to eat them with everything. These are hollowed out and stuffed with a tuna mix and tasted ace. Serves 2
All you need is
½ tin tuna drained
¼ red pepper
2 tbsp low fat mayonnaise
Sprinkle of grated cheese
To make it just
Top and tail the courgette, prick and microwave for 3 minutes to soften.
Chop in half lengthwise and hollow out the centre season with salt and pepper place in the oven for 15 minutes to roast.
In a bowl mix the tuna, red onion, red pepper, cucumber and mayonnaise. Once the courgette is cooked fill with the tuna mix and sprinkle cheese over and return to the oven for 5-7 minutes.

For someone who isn’t a big fan of courgette this was surprisingly tasty, I cooked it for someone who was a courgette fan and they loved it.
This was slightly bland so the courgette needed to be seasoned a lot more with possibly some garlic or chilli.
Overall, this was easy and simple with little effort I can’t really argue against it.
