The perfect group meal, this serves three but you can easily bump it all up to be fuller and feed more mouths. Fajitas are great especially with the marinated chicken it has more flavour and taste. Serves 3
All you need is
1 chicken breast
1 red onion
½ yellow bell pepper
3 wholemeal wraps
All you need for the marinade is
1 tbsp olive oil
1 tbsp lemon juice
1 tbsp BBQ sauce
1 tbsp honey
1 tsp paprika
1 tsp black pepper
1 tsp chilli powder
1 tsp garlic powder
All you need for the fajita sauce is
2 tbsp passata
2 tbsp BBQ sauce
1 tbsp mixed herbs
2 tsp cumin
3 tbsp water
To make it just
In a bowl combine all the marinating ingredients well so that they form a smooth paste before coating the chicken breasts in the sauce, then cover with cling film and leave for 4 hours.
Slice the chicken into thin strips and gently fry off, use the leftover marinating sauce instead of oil to fry the chicken.
Peel the courgette and carrot so they become long strips, slice the pepper and onion into strips as well and add to the pan along with the sweetcorn.
In a bowl combine all the ingredients for the fajita sauce and gently pour over the frying pan ingredients mixing well to ensure it’s all fully coated.
Serve in wraps with plenty of salad.

A large filling meal perfect to enjoy with friends whilst it seems a bit fiddly due to the large quantity of ingredients. It does pay off though as the fajitas are full of great flavour.
The chicken seasoning worked well with the fajitas but can work well alone or with potatoes.
Overall, this was a lovely dinner, a large quantity of food so perfect for a group dinner.
