This is such simple winter dish, lamb cooks quickly so you won’t have to wait too long to enjoy this dish. Whilst this dish may seem costly, it makes 3 portions so works out £2.29 per person. Serves 3
All you need is
350g lamb mince
1 white onion
1 red pepper
½ ball of mozzarella
2 tbsp mixed herbs
1 tbsp black pepper
To make it just
Bring a pan of water to the boil and cook the pasta until soft (around 20 minutes).
Pre-heat your oven to 240°C/220°C Fan/Gas Mark 9.
Finely chop onion, red pepper and mushrooms then fry in a pan with the lamb mince and spinach.
Once the mince has browned and spinach had wilted drain the mixture to remove all excess oil.
Place the lamb mixture back in the pan and then add the passata, herbs and black pepper.
Once the pasta is cooked drain and return to the pan.
When the passata is boiling add to the pasta and fully mix coating the pasta in passata.
Top with thin slices of mozzarella then place in the oven for a further 5 minutes.

This meal is a great example of how you can chuck a meal together with basic ingredients laying around in your cupboard and fridge.
We had this with homemade garlic bread (2 tbsp melted butter, 2 tsp garlic powder mixed in, cut slices in a baguette and pour in the butter, bake for 5 minutes then cut it slices) and salad.
