Chinese-Style Pork Soup

Slow cooked meals don’t have to be done in a slow cooker, especially if you’re trying to save money on kitchen items. Pop all the ingredients in a big pan and place in the oven for a few hours and then enjoy. These makes enough for 2 and a little leftover. Serves 2

All you need is

2 tsp olive oil

1 red onion

2 pork chops with fat removed

2 tsp garlic

1 tsp cumin

1 tsp mixed herbs

100g frozen vegetables

½ tsp chilli powder

1 pint beef stock

To make it just

Chop the pork into small chunks and fry in a small amount of oil.

In a casserole dish combine all ingredients.

Leave in the oven on gas mark 190°C/170°C Fan/Gas Mark 5 for 2 hours 15 minutes.

I enjoyed this with a brown baguette covered in butter, and it was great. This was initially a pork stew but came out watery and ended up being a tasty soup.

This can be frozen in an airtight container as well, or kept for a few days in the fridge.
