One of my favourite meals of all time, Thai Green Curry is warming, packing a punch and super easy to make. My mother always used to make this for my brother and I when we lived at home and every since I have tried to recreate the dish. Whilst it takes a slight twist on her original recipe it is still just as good. Serves 2
All you need is
400g coconut milk
1 chicken breast
120g cannelloni beans
2 ½ tsp thai green paste
To make it just
Chop the chicken into small chunks and either grill on a medium heat (gas mark 5/190C/170 Fan) or fry with little or no oil.
In a saucepan combine all ingredients including the cooked chicken, leave to cook for 10 minutes on a medium heat.
Important note: start with 1 tsp of thai green paste and then gradually add more to your taste preferences as it can become an incredibly spicy curry.
Once warm either enjoy with rice or leave to cool and freeze.

Whilst this didn’t taste exactly like mummas (it never does, does it?) it still was a great first try!
The chicken tasted great, but could have easily been swapped out for some more pulses, which I will work out for next time to create a vegetarian alternative.
