British Pie Week; let’s celebrate

So this weekend brings to the close #BritishPieWeek my favourite week of the year, and I’ve celebrated it in style. Pie doesn’t have to just be made with pastry of course, potato topped pies and just as tasty and easy. Here is a list of some of my favourite budget pies.
Salmon and prawn pie     Serves 2 | £2.22


All you need is

30g smoked salmon | 50g prawns | 150g frozen vegetables | 1 tbsp butter | 1 tbsp flour | 50ml milk | 50g grated cheddar | 50g potatoes | Pinch salt and pepper

To make it just

Pre-heat your oven to 190°C/170°C Fan/Gas Mark 5. Chop the potatoes into small pieces and place in boiling water until soft, then mash. Chop the salmon and place into a pie dish, add the prawns and vegetables. In a pan melt butter, mix in flour and slowly add the milk. Mix in half the grated cheese and pour on top of the fish and vegetables. Top the dish with the mash and remaining cheese the cook for 10 minutes.

All you need is
A cup of skimmed milk | 1 Salmon fillet | 10g cheedar cheese| 1 tbsp butter | 1 tbsp flour | 50g frozen carrots | 80g potatoes
To make it just
Place the salmon fillet on a low heat under the grill for 10 minutes, turning halfway. Thinly slice the potatoes and add them to a pan of boiling water, once soft drain and put aside. In a pan melt the butter and add the flour then milk and mix until thick. In a pie dish place the salmon and flake, add the carrots and then sauce. Top with the potatoes and cheese and place under grill until cheese is crisp.
Chicken and chickpea pie     Serves 4 | £3.34

All you need is

1 chicken breast | 200g chickpeas | 4 bacon medallions | Filo pastry sheets | 100g spinach | 2 mushrooms | 2 garlic cloves | 1 shallot | 2 carrots | 

For sauce

500ml skimmed milk | 20g feta | 1 tbsp parmesan | 1 tbsp mustard | 1 tbsp butter | 1 tbsp flour | 1 tbsp herbs

To make it just

Chop the chicken into chunks and place under grill with bacon until cooked. In a pan melt the butter mix in flour and gradually add the milk until thick. Mix in parmesan, herbs and feta. Finely chop shallots and garlic and peel carrot to the core and place all into frying pan adding spinach and chickpeas. Place fried ingredients, chicken, bacon and sauce into a pie dish and cover with filo pastry sheets. Bake on 200°C/180°C Fan/Gas Mark 6 until the pastry goes golden brown, normally takes around 20 minutes.

Chicken pie     Serves 6 | £6.19

All you need is 
Ready rolled puff pastry | 3 chicken breasts | 2 pork sausages | 1 chicken stock cube | 1/2 tub Garlic and Herb soft cheese | 1 tbsp plain flour | 325g frozen vegetables | Sprinkly cheddar cheese | 1 egg
To make it just
Preheat the oven to gas mark 6. Then chop the sausages and chicken into cubes and then fry off with a little oil. Whilst they are cooking place your frozen vegetables in a saucepan with boiling water until soft, then drain. In a saucepan dissolve the stock cube in boiling water and continually stir, then mix in the garlic and herb soft cheese, grated cheese and flour. Roll out the pastry and measure against you’re pie dish, then using either a pastry brush or your fingers, lightly brush the top of the pie with egg to make it golden. Place the veggies into the bottom of the dish, top with the meat and then cover with the sauce.Top the pie with pastry crimping the edges to hold it all in and then cook in the oven until the top is a nice golden brown – it should take around 25 minutes.

Shepherd’s Pie     Serves 6 | £6.84

All you need is 
2 large sweet potatoes | 5 white potatoes | 50g grated cheddar cheese | 1 tbsp butter | 500g beef mince | 5 button mushrooms | 1 white onion | 1 tin cannellini beans | 1 tin red haricot beans | 450ml beef gravy | 2 handfuls spinach | 200g frozen vegetables | Pinch salt and pepper | 1 tbsp garlic | 1 tbsp mixed herbs

To make it just

Peel and chop the potatoes and place in boiling water until soft, then mash down and add salt, pepper and butter until smooth. Chop the mushrooms and onion into cubes and then place in a large pan with the mince and cook until the mince has browned. Add the beans, spinach and vegetables to the mince and turn the heat down slightly. Make the gravy and add to the mince, add the garlic, herbs, salt and pepper and mix well. In a large baking dish place the mince mixture and spread evenly. Top with the mash potato and then sprinkle over the cheese. Place under the grill until the cheese has melted.

Chicken and bacon pie     Serves 4 | £5.39

All you need is
1 chicken breast | 3 bacon medallions | 150g frozen mixed vegetables | 1 white onion | 500ml chicken stock | 1/2 tub light cheese spread | Salt and Pepper | Filo pastry | 1 tbsp plain flour
To make it just
Chop the chicken and bacon into chunks and fry with chopped onion. Place vegetables in boiling water until cooked. Add to frying pan and cover with stock and stir in cheese spread and sprinkle over flour. Pour frying pan contents into baking dish and cover the filo pastry and place in oven on Gas Mark 7 until pastry turns golden.
