Meatballs and spaghetti

This tasty meal is enough for three, its simple and easy to make and if you’re cooking for one, either make slightly less (divide recipe) or make lots including the sauce and freeze it all. Serves 3

All you need for the meatballs is

250g lamb mince

1 egg

3 tbsp breadcrumbs

1 tbsp Italian herbs

1 tsp garlic powder

½ tsp chilli flakes

¼ red onion

Pinch salt and pepper

All you need for the sauce and pasta is

250g passata

1 tbsp Italian herbs

1 tsp garlic powder

½ tsp chilli powder

½ red onion

Handful spinach leaves

300g wholemeal spaghetti

To make it just

In a bowl place all ingredients for the meatballs and mix well using hands.

Once mixed mould into ball shapes, place on a plate and leave in the fridge for at least 2 and a half hours.

Bring a pan of water to boil, once boiling add the spaghetti.

When you’re ready to cook remove from fridge and place in a pan to fry, place them as if they were numbers on a clock so you know which one to turn first.

When they’ve all gone brown place on kitchen roll and drain oil from pan.

Return the pan to the heat but turn it down to a low heat.

Chop the red onion into slices and finely chop the spinach.

Place the red onion and spinach in the pan and fry for a few minutes. Then add the rest of the sauce ingredients and stir well.

Once the sauce begins to bubble add the meatballs and coat them in the sauce.

Drain the spaghetti and mix into the meatballs and sauce.

This works great for a lunch as well, if you swap the pasta for a small wholemeal baguette and add some salad in you can create a homemade meatball sub.

Try and avoid the cheese if your opting for something cheesy keep it light and low.
