Got guests over for dinner? Or have leftover salmon? Whatever the need, these salmon omelette muffins are perfect, small and full of flavour. Makes 5.
All you need is
1/2 white onion
1 tsp salt
1 tsp pepper
1 tsp basil
10g cheddar cheese
To make it just
Chop the salmon into small chunks and place in a bowl, finely chop the onion and grate the cheese and add.
Mix in all other ingredients.
Spray a muffin tray with oil or lightly brush with oil and pour in the mixture.
Bake in the oven on 200°C/180°C Fan/Gas Mark 6 for 20 minutes.

These are perfect bite sized delights, at first they did seem a bit soft but after a few extra minutes in the oven they hardened slightly so were easier to eat.
These tasted fresh and new, an alternative from normal salmon and cream cheese options.
