Try this curry tonight, you won’t regret it. This is simple and easy to make, just pop it in a slow cooker or in a pot and leave to cook for a few hours. Serves 4.
All you need is
2 chicken breasts
6 new potatoes
70g red lentils
3 cloves of garlic
1 tbsp cumin
1 tbsp ginger
1 tbsp curry powder
1 tsp chilli flakes
Pinch salt and pepper
1 tbsp pumpkin seeds
1 tbsp sunflower seeds
To make it just
Warm a frying pan, whilst warming chop the chicken into small chunks and chop the shallot and garlic finely, fry it all off together.
Boil a saucepan of water, chop the potatoes into large chunks and place in boiling water for 10 minutes.
After 10 minutes add in the lentils and stir well to avoid sticking, after cooking time drain and return to the pan.
Add the chicken, shallot and garlic into the saucepan with the potatoes.
Then add all the other ingredients, ensure you taste to make sure it’s not too spicy for your tastebuds.
Leave to cook on low for 2 hours to allow flavours to infuse well.

If you’re a vegetarian, then simply swap the chicken out for more lentils or chickpeas!
