Beef stew

Whilst we are now well into spring, there are still of course some days colder than others, and on days like these, we need comfort food. This beef stew is the ideal comfort food as you can put it together in a few minutes then leave to stew all day. Serves 3.

All you need is

5 medium potatoes

1 large white onion

1 large garlic clove

4 small mushrooms

2 large handfuls of spinach

200g beef chunks

680ml beef stock

1 tbsp flour

2 tbsp passata

1 tsp soy sauce

Pinch salt and pepper

1 tsp basil

1 tsp garlic powder

1 tsp sugar

½ tsp chilli powder

To make it just

Pre-heat your oven to 150°C/130°C Fan/Gas Mark 2, if you have a slow cooker you can use it instead and keep it on the low setting if doing the stew for over 5 hours if not then have it on medium.

Chop up the potatoes, onion, garlic, mushrooms, spinach and beef into chunks and place in the dish.

Add other ingredients and mix in well.

Leave to cook either in the oven or a slow cooker for as long as you can, at least 5 and a half hours.

If you’ve got a spare few hours on a Sunday, or fancy some batch cooking during the week, this is the ideal dish. Put it together, leave it for a few hours then cool and bag up for the freezer.

Of course if you do decide to tuck in straight away either enjoy alone or add some 3 veg mash to bulk it out.
